Typical biscuits of the province of Teramo which  recall the famous medieval recipe of "pan pepato".

 

Preparation
Mix the flour with the butter, add the boiling honey, cocoa, grated orange zest and pepper. Add whole almonds to the whole dough and place it on the pan forming large crushed cannelloni. Bake in preheated oven at 170 ° C for 15 minutes. As soon as they are ready, cut the dough with a sharp knife to obtain biscuits of a thickness of one cm.

 

Ingredients (about 3 kg.)
1 kg. and a half of flour, 1 kg. and a half of honey, 2 tablespoons of cocoa, 500 gr. of whole almonds, grated zest of 2 oranges, 1 tablespoon of ground pepper.
