A vegetarian dish with old origins. It seems to be date back to 1700 when the imported vegetables from America start to spread in Abruzzo.
Preparation
Cut the aubergines into slices and put them in salt for a couple of hours. Mince celery, oregano, garlic and parsley. Cut the potatoes, onions, peppers and tomatoes. Put an alternating layer of each vegetable in a pan than seasoning them with the previously prepared seasoned mince. Add salt, pepper, oil and bake at 180 ° C. Cook until the sauce is drained. 1 kg. of potatoes, 1 kg. of peppers, 1 kg. of tomatoes, 1 kg. of onions, 1 kg. of aubergines, oil to taste, celery, oregano, garlic, pepper, parsley, salt to taste.
