First course dish served, according to the Teramo tradition, on the Christmas Eve
Preparation
Sliced in square shapes the cardoon and slightly boil it. Prepare the broth putting the cardoon inside the boil. Add 3 scrambled eggs and parmesan cheese. When the eggs will be well dried, turn off the fire and serve it. Enjoy!!
Ingredients (for 6 people)
3Kg of cardoon, 3 eggs, 2 broth litres, 50gr of grated parmesan.
