Arrosticini are skewers made of small cubic pieces of sheep meat placed on a wooden sticks.
The weight of every skewer can vary between 20 to 30 gr and they are usually made with 25% of fat meat.
The cooking process must be done on the grill (with charcoal of oak or beech) using a special narrow and long shape tool that is perfect to have an appropriate cooking of the skewers. They should be tasted immediately after cooking (adding a bit of fine salt), to enhance their special flavor and fragrance.
Arrosticini have a consolidated success so much as to be considered the dish symbol of the whole Abruzzo.
In Teramo’s food culture Arrosticini are strictely and historically linked to pastoralism and the practice of transhumance.
